Yes — they're kept on your account and encrypted, so you can open any of them again or delete them whenever you like. They are never sold.
Yes. Connect the apps you'd like it to help with and it can look at what it needs and act — send the email, put the meeting in, find the file — whether you asked out loud or in writing.
Only if you tell it to. It looks at things freely, so it's useful from the very first question. But before it sends, books or changes anything, it shows you exactly what it is about to do and waits for your yes — out loud, or with a tap. If there is a conversation where you would rather it just got on with things, you can say so.
